Goodrich-When it comes to pizza’it’s all in the stone.
Terry Cadarette, owner of Buddy’s Brick Oven, 8341 S. State Road, assures the key to outstanding pizza starts at 600 degrees on a flat rock.
‘The idea is the stone material, typically quartz, allows ovens to evenly distribute the heat, resulting in crispy pizza,? said Cadarette. ‘We produce a pizza that is not only unique, but also is an improvement over the conveyer belt product that many of the larger pizza companies use.?
Cadarette opened Buddy’s Brick Oven in February and since then customers are coming back for more.
‘We are a true pizza maker,? he said. ‘We use whole milk cheese on our piz-zas. Remember that the richness of flavor of the cheese is related to the amount of butterfat in the milk. Most now use a blend today. In addition we use Michigan meats from Dearborn Hams and purchase products from our state. You can buy cheaper products and make less expensive pizzas, but that’s just not us.?
So far the ‘Bacon Lettuce Pizza? has been the top seller.
‘Mozzarella, bacon, tomato and mayo’it tastes like a sandwich you’d have on a summer day,? he said. ‘If pizza’s not for you, then our pizza bread with cheese and pepperoni rolled up in golden Buddy’s dough is another signature item on our menu. It’s similar to a calzone, but a very unique taste. People come back for more.?
Cadarette, a 1986 Brandon High School graduate, also owns Real Estate Pro’s, located next door to Buddy’s Brick Oven Pizza.
