While the Village and Sagebrush Cantina owner Dia Zaraga have apparently agreed on the specifics regarding a Dumpster for the business, an official re-opening date for the restaurant remains in limbo.
Police Chief Jerry Narsh explained that when the popular downtown eatery burned, Zaraga’s liquor license was placed in escrow by the State Liquor Control Commission.
Because the restaurant had to be reconstructed, it is essentially a new building, which requires the owner to again follow certain LLC protocol.
‘Liquor licenses are address specific,? said Narsh. ‘But because it’s a new building, there is a process to follow. Inspections have to take place and we’re in the process of that right now.?
Narsh added that the police department will do its own inspection of the property to make sure all the requirements have been met.
Once inspections are finished, it is expected that the Liquor Commission will take Zaraga’s license out of escrow, paving the way for the restaurant’s reopening.
